Jollof rice is a popular West African cuisine found in Nigeria, Ghana, Togo, Senegal, Gambia, Mali, Sierra Leone, the Ivory Coast, Cameroun, and Liberia. Each of these West African countries, however, has its own version of this dish. It’s cheap and simple to make, but it’s excellent.

It’s critical to have a flavor base while preparing Jollof rice. Don’t rush into dumping your components into the pot; else, you’ll wind up with a “concoction.” Each step is important, so make an effort to complete each one thoroughly.

Starting with the onions is an unavoidable basis for generating flavor in this meal. This should just take 3–5 minutes. After that, add the tomato paste and stir well. I simply cook this for another 5 minutes or so to provide a deep and rich tomato flavor.
Cook for another two minutes with the Ginger and Garlic, along with the Tomato paste; in fact, you’ll detect it in the smell by the time it’s done. If you continue to cook it any longer, you risk scorching them.

Toss in my peppers, which I’ve pureed. In most cases, there is no set time for frying this pepper. When the sauce thickens to the point where the oil literally floats on top, I usually stop. Most of the water has evaporated, and the sauce no longer smells raw. Trust me, you’ll know, but just in case you’re not sure, I’d guess 20 to 25 minutes, depending on how much water is in your pureed pepper.

Finally, I add the thyme, curry powder, salt, white pepper (optional), and seasoning cubes to round out my flavor. If necessary, adjust the seasoning at this time. Then I add my rice once the flavor is perfect. Make sure you toss the Rice thoroughly until the sauce is evenly distributed throughout each grain. Add the chicken stock now. Stir it briefly before covering it with a tight-fitting lid. Cover the rice with foil paper before sealing it with the lid if your lid isn’t tight enough. This is because Jollof requires a lot of steam to cook properly.
When the rice starts to boil, immediately reduce the heat to medium-low and cook for another 20 to 25 minutes, or until the rice is done.
